How Do You Know If an Egg Is Fertilized? The Steps in the Order They Happen

A fertilized chicken egg is identified one of two ways: by cracking it open and finding a ring-shaped blastoderm on the yolk, or by incubating it and candling it between day 5 and day 10, when a live embryo shows as a dark spot with red blood vessels radiating outward. Joseph M. Mauldin, Extension Poultry Scientist at the University of Georgia Cooperative Extension, describes the fertile structure as having "a doughnut-like appearance with the outer ring of the doughnut a white color," with a clear area inside that ring. The infertile version is smaller, with a discontinuous edge that "will not resemble a ring" and "a bright, white dot" instead of a clear center. Chicken eggs hatch on day 21, the third and final confirmation.

The two checks are not interchangeable. One destroys the egg and answers on day zero. The other preserves it and waits for an embryo large enough to cast a shadow. Floating or shaking an egg reports nothing.

What is physically different inside a fertilized egg

The difference exists at the moment of lay. Dr. Jacquie Jacob of the University of Kentucky, who writes the eXtension Small and Backyard Poultry material, puts the timing plainly: "It then takes about 26 hours for a hen to create a complete egg to be laid. So, when an egg is laid, it has a 26-hour old embryo." Fertilization happens in the upper oviduct, before any shell exists.

By the time the shell is finished, the embryo is no longer a single cell. University of California ANR Publication 8134, written by R. A. Ernst, F. A. Bradley, U. K. Abbott and R. M. Craig of the Animal Science Department at UC Davis, defines the germinal disc as a fertilized blastodisc in which "the embryo has about 50,000 cells when the egg is laid."

Those cells then stop. Growth resumes only when an egg is "warmed above 80ºF (26.7ºC)," the same publication notes, so a fertilized egg held below that threshold stays a flat disc and cooks like any other egg.

Step 1: crack one egg before the batch goes in

Breakout is the only test that answers on the day the eggs are collected, and the only one that measures fertilization rather than survival. Jacob's description matches Mauldin's: "When broken open, the infertile egg has a small white spot on the surface of the yolk. For a fertile egg, the spot is slightly larger and has a minute clear spot in the middle. This is the microscopic embryo."

Open the egg into a shallow bowl and rotate the yolk gently with a spoon until the pale spot faces up. It sits on the yolk surface, not inside it. Chalazae, the white cords anchoring the yolk, can obscure it.

The step measures the flock rather than the individual egg, which is why UC ANR advises examining the entire group when small numbers are set. Cracking two or three eggs from the same hens gives a fertility estimate for everything they laid that week.

Step 2: set the eggs, because visibility depends on the conditions

Fertility does not change during incubation. Whether it becomes visible does. An egg held at 96°F for a day is still fertilized and will still candle clear at day 7, because the embryo died before it could grow vessels. Phillip J. Clauer, Poultry Extension Specialist in Animal and Poultry Sciences at Virginia Cooperative Extension, quantifies the asymmetry: 15 minutes at 105°F "will seriously affect the embryos," while 3 or 4 hours at 95°F "will only slow the chick's metabolic rate."

Published settings disagree, and the gaps matter in a small incubator.

The temperature gap is half a degree and the humidity gap five points, both inside the tolerance Clauer gives: "The acceptable range is 97° to 102°F." The turning schedules diverge further. Mauldin's guidance that turning "is not necessary the last 7 days before hatch" contradicts the day-18 lockdown that Mississippi State and Virginia Cooperative Extension both specify, a difference of four days.

Step 3: candle between day 5 and day 10

UC ANR Publication 8134 states that chicken, pheasant, partridge and quail eggs "should be candled after 5 to 7 days of incubation." Mauldin sets it later: candling "may be successfully done as early as 3 to 4 days of incubation," but "it is sometimes difficult to see the developing embryo at this stage, especially when the egg shells are brown," and "the optimum time for candling is around 8-10 days." His caution about shell color pushes dark-egg breeds toward the later end.

By then the embryo and its membranes fill roughly two-thirds of the egg's contents as a dark mass, and Mauldin notes the observer "should be able to detect a reddish tinge from the numerous blood vessels in the membranes." UC ANR adds movement to the list: a live embryo shows "some body movement when stimulated by the candling light." An egg with no development lets light pass through the whole interior, and the yolk shadow shows as a darker blur.

In dead embryos the vessels "will be very dark, almost black," Mauldin writes, because blood loses its red color once circulation stops.

What a clear egg proves, and what it does not

A clear egg at day 7 is not proof that the egg was infertile. Mauldin is direct about the error: "It is inaccurate to estimate fertility without examining the contents of eggs removed from the incubator. When candling, very early mortality, in many cases, will look like infertiles and to call them infertile would underestimate fertility and underestimate mortality."

UC ANR quantifies the split: "Under normal circumstances, more than half of all clears are true infertiles." The rest are fertilized eggs that died before producing anything visible. One such category, positive development, covers growth that started and stopped without forming blood; it accounts for 1 to 2 percent of clears normally and rises when eggs are stored badly or shipped roughly.

A blood ring is a separate finding, and a fertile one. UC ANR defines it as a "circular blood remnant" that "signifies that the embryo has died at a young age." Every blood ring in a tray is one more fertilized egg on the tally.

Candled fertility counts the eggs left after clears are pulled; true fertility requires breaking those clears open.

Step 4: lockdown on day 18, hatch on day 21

Chicken eggs take 21 days, a figure Virginia Cooperative Extension and Mississippi State Extension both publish without qualification. Turning stops on day 18 in both, and humidity rises for the final stretch: Clauer specifies 65 to 70 percent for the last three days, Mississippi State 65 percent or higher.

The incubator stays shut from that point. Clauer covers the humidity and the temptation together: "do not open the incubator until the hatch is completed," and "do not help the chicks from the shell at hatching time. If it doesn't hatch, there is usually a good reason."

Chicks come out when they are dry and fluffy, 6 to 12 hours after hatching. Hatch timing is heritable: keep every straggler for breeding and "in a few years each hatch could last 4 days or longer."

Step 5: break out the failures and calculate a real number

Hatch day converts a tray of eggs into two numbers, and Clauer gives both formulas. Percent fertility is fertile eggs divided by total eggs set. Percent hatchability is chicks hatched divided by fertile eggs. Skipping the breakout on unhatched eggs collapses the two into one useless figure.

UC ANR supplies the benchmarks. Hatchability "should be above 85%." A typical hatch of total eggs set "might be 80% to 90%." The gap between them, which the publication calls spread, runs 10 to 12 percent for chicken eggs, so a tray hatching 82 percent of everything set should trace back to roughly 92 to 94 percent fertility. Modern chicken strains stored under good conditions should lose "no more than 10 percent at the first candling."

The two numbers point at different problems. Fertility below the benchmark is a flock question about rooster age, ratio, nutrition or leg soundness. Fertility at 93 percent with hatchability at 60 percent is an incubator question.

Are farm-fresh eggs fertilized?

Eggs from a supermarket carton are not. Jacob states the reason without hedging: "Commercial laying hens are housed without roosters. As a result, commercial table eggs are not potential chicks, even if incubated."

Eggs from a backyard flock with an active rooster generally are, and they stay that way for weeks after he leaves. Mississippi State Extension reports that hens continue producing fertile eggs "up to four weeks, depending on bird species" after a rooster is removed, because sperm-storage structures in the oviduct hold semen for later use. A replacement rooster carries the same lag in reverse: "it may require 3 weeks before it can be assured that all eggs will produce chicks sired by the new rooster."

Refrigeration ends the question for eating eggs. The FDA rule on Salmonella Enteritidis requires shell eggs for human consumption to be held at or below 45°F ambient beginning 36 hours after lay, and FDA advises consumers to store them at 40°F or below. Both sit far under the 80°F threshold at which cell growth resumes.

A red speck in the yolk is not a sign of fertilization. USDA's Food Safety and Inspection Service attributes blood spots to a ruptured blood vessel on the yolk surface during egg formation, and reports the eggs are safe to eat.

What a human fertility test measures instead

Chicken fertilization is checked by looking at a physical structure, on the yolk or through the shell. No consumer test does that in humans, and no poultry benchmark transfers to human reproduction.

MedlinePlus, published by the National Library of Medicine, describes the ovulation home test as detecting "a rise in luteinizing hormone (LH) in the urine," where "a positive result means you should ovulate in the next 24 to 36 hours." That forecasts egg release and says nothing about fertilization.

The pregnancy test measures a later signal: human chorionic gonadotropin, which MedlinePlus reports "appears in the blood and urine of pregnant women as early as 10 days after conception." The hormone is produced after an embryo implants, placing the earliest detectable evidence more than a week downstream of fertilization. Questions about human fertility belong with a clinician, whose workup measures hormone levels and gamete quality rather than anything visible.
